That Cortney can cook!

Look what happened when Cortney came !

We discovered if you warm a pear in the microwave
 with a bit of butter, top with vanilla icecream,
 a blackberry and carmel syrup - that the results are sublime!

Cortney's very, very delicious, special Browned sage, Butternut Lasagne
Cortney’s Butternut Squash Lasagna
(recipe below)





1 Large butternut squash
1 package fresh sage, slightly chopped
1 package lasagna noodles
½ cup Chicken broth
1 tsp. salt
4 tbs. butter
1 package sausage (chicken sausage with mixed seasoning is good)
1 onion, chopped
½ cup cream or milk
16 oz. mozzarella cheese

Cook butternut squash until very tender. Remove skin and put squash in large mixing bowl or food processor with the milk/cream and salt. Saute ½ the onion with 1 tbs. butter. Add to butternut squash mixture. Blend with hand blender or food processor until smooth.

Cook the sausage with the other half of onion and add seasoning as needed.

Saute the sage with 3 tbs. butter until butter is slightly browned.

Pour ¼ cup chicken broth in 9x13 pan. Layer one row of lasagna noodles, one row of butternut squash mixture, one row of lasagna, one row of sausage (using half the sausage) and butternut squash mix., one row of lasagna, add the rest of the sausage and top with the sage butter. Cover with ½ cup chicken broth and mozzarella cheese.

Cover with tin foil and bake at 350* for 50-60 minutes until cooked through. Remove tin foil for the last 10 minutes of baking.

2011 Montana, N Dakota, Colorado Trail

 My cousins gave us a tour of a dream house overlooking the Sun River

 I got to meet Jennie - She and her husband live up in the moutains with no running water, no electricity.  She showed me where they installed a door this year... She thinks its inconvenient!  They used to use a blanket to cover the doorway - Picture a Montana winter with no door.  It was very interesting to see how they rough-it!!
 Lura brought down the house with her performance as Heavenly Delight - A play written after the format of Agatha's Three Blind Mice.
 This summer we went to Mount Rushmore and Crazy Horse - It was worth the miles!

  Korczak Ziolkowski is the artist who with his family carves Crazy Horse.  When his children were young he had them sketch wildlife and then created this gate from their sketches.
 After visiting Rushmore and the Crazy Horse monument we landed in Wyoming where Willie sang us a few lullabies before we went to bed.   His little sister, Bobbie played a fine tune on the piano, too.  It was the most civilized concert I've ever been to - a lot of oilfield workers and their families.

 Brady strapping on the survival tool Trent gave him.  It has a knife, a compass, a string for fishing - great for an outdoor boy like Brady - I kinda think he likes it!

 Hiking to the beaver pond to fish - It was beautiful, yellow aspen and blue, blue skies.

 On the way down the Mesa Gary pulled off onto a gravel road and we picked chokecherries in the dark - It was so cool, I hadn't picked chokecherries since we were kids in Montana!

So I went home with forty pounds of peaches and some chokecherries, too :0)
